Raymundo Lozano Retiz, José Eduardo Cedillo García and Alfredo Díaz Cano, are students of the UNAM. Together they created Chapi. A company that produces alternative foods to the consumption of meat based on grasshoppers, called Croquichapi.
Chapi emerged as a project in the Hult Prize. A competition that offers resources for social enterprises that tackle global challenges. The students wanted to develop a company focused on sustainable food and that. In addition, would comply with a circular economy in all its phases.

Rich and nutritious Croquichapi
The grasshopper was selected by the students because it is a very nutritious food and rich in protein. This is how Croquichapi emerged, a medallion similar to hamburger meat. But with a little detail, it is made from grasshoppers.
It is important to say that Croquichapi is made in an artisanal way. The grasshoppers are brought from Oaxaca and all the ingredients come from organic markets. Young people hope that in the medium term they will be able to count on their own grasshopper hatchery. Of course, with the support of researchers and entomologists from UNAM.
The students assured that their product has 23% protein “more than an average steak”, said Alfredo Díaz for UNAM Global. These types of projects can have a high impact in our country, considering that Mexico is one of the countries with serious food problems such as malnutrition and obesity.
Chapi’s creators will continue to seek to take their project to a larger scale. Their next stop is the Hult Prize at the regional level. Which will be held in Bogotá, Colombia, on April 24 and 25, where they will represent Mexico.
