The first nixtamal-based tortilla place was inaugurated in a Manhattan market. And the one who received the invitation to put it was Fernando Ruiz, a Mexican who moved to New York 10 years ago.

Nothing like Mexican tortillas
When Fernando and his wife moved to Corona, Queens, they wanted to bring the flavor of the Mexican omelette. And so they did in one of the most Mexican neighborhoods in New York. But recently, he received an invitation to put his second tortilla shop, now in Manhattan.
“The beautiful thing was that this great project came looking for me. They went to Queens to look for me and entered the tortilla shop and said what you have here, we want it there”.
It just started in 2020 and opened the tortillería named Nixtamal, in honor of its Mexican roots. There work 8 people who are divided into two shifts. One of them is Fernando Pérez, who expressed the following:
“What pleases me is seeing people go joyful. To bring them a little bit of Mexico”.
And what better way to do it with tortillas made from the nixtamalization process!
This procedure consists of cooking the corn with water and lime, but the grains must be dry. Then the nixtamal is ground to make the dough for tortillas or tamales. In fact, Nixtamal is a word that comes from the Nahuatl nextamalli, which means ‘tamal in ashes’.

But that’s not all, the Nixtamal tortillería in Manhattan also sells tacos and the favorites are those of ‘pastor’.
And it is that Fernando Ruiz wanted to remove the idea that you could not find good food in New York. Little by little he has shown it because his team has a lot of talent and experience for Mexican recipes.
