Traditional Mexican cuisine is celebrating a decade as an Intangible Cultural Heritage of Humanity. The UNESCO granted this recognition in November 2010, recognizing it as part of the community and ancestral culture that has been kept alive in our country. The weight of this legacy rests on the shoulders of traditional cooks.
The traditional cooks are in charge of preserving the ancient secrets of gastronomy that give identity to our country. These women, grew by the stove, wearing their traditional costumes and surrounded by clay pots.
Safeguarding the recipes and key ingredients of Mexican gastronomy is no easy task. Because, they are responsible for the regional identity being reflected in a main course.

Traditional cooks, a female labor
According to data published by El Sol de México, of 100% of traditional cooks, 90% are women.
States like Michoacán and Oaxaca, have been concerned to recognize and preserve this valuable profession. Besides, the people of Michoacán worked hard to ensure that traditional Mexican cuisine was recognized as Intangible Cultural Heritage of Humanity by UNESCO.
In Oaxaca, other actions have been chosen, such as the book Oaxaca and its cooks: Gastronomic Treasure of Mexico. This work brings together the stories of 77 traditional cooks. As well as their culinary knowledge.
There are other organizations such as the Conservatory of Mexican Gastronomic Culture. It is dedicated to preserving the uses and customs of traditional Mexican cuisine. Their motto is “Mexican cuisine, our legacy to the world”. And they keep it alive through programs and projects that seek to give traditional cuisine the place it deserves.
In addition to immersing ourselves in bibliography on traditional Mexican cuisine. It is important that we value the important work of traditional cooks as an expression of historical continuity through culinary work.
