Flor de calabaza (calabaza’s flower) quesadillas

These flor de calabaza quesadillas are a typical Mexican dish found in many markets and street stalls. As they are a Mexican favorite, today we tell you the recipe.

Flor de calabaza, a very colorful ingredient

The fact that this ingredient is an actual flower, dishes get a very appealing and decorative touch. But of course the best of all is that they are edible!

As if this weren’t enough, these quesadillas are perfect if you are on a diet, due to its low amount of calories. Also, whether its breakfast lunch of dinner, they are an ideal meal.

The recipe

Preparing flor de calabaza quesadillas is really simple. It takes only about 15 minutes.

In order to prepare 6 quesadillas you will need:

150 grams of cheese (choose a melting cheese, like Manchego, Chihuahua or Oaxaca)

1 bunch of flor de calabaza

Corn tortillas

1/4 chopped onion

1 leave of epazote

1 tablespoon of olive oil

Salt

Prepare your quesadillas!

First, you mush was the calabaza’s flowers and remove the stems and pistils so that you only have the flower. Make this carefully, they are very delicate.

On a hot pan, put the olive oil and sauté the chopped onion. Then add the flor de calabaza and stir fry them together with the epazote and salt. Mix everything until the flowers turn a bit darker.

Finally, heat up tortillas and put the cheese and the flor de calabaza inside. Fold your tortillas and put some pressure on the quesadillas, heat both sides and wait for the cheese to melt. Simple, right?

We recommend adding some sauce, choose the one you like the most to enhance the flavor of your quesadillas. Also, you may prepare some dough, put the flor de calabaza and cheese inside (like an empanada) and fry them for a few minutes.
